Spinach Dal

Spinach is native to central and southwestern Asia. This is a versatile food. It can be eaten raw in a salad or a green smoothie.  Along with other green leafy vegetables is considered to be a rich source of iron, high nutritional values and is extremely rich in antioxidants, especially when fresh, steamed, or quickly boiled.

Ingredients:
1 pack of spinach washed and dieced
1 Onion chopped
2 green chillies chopped
3-4 garlic pips chopped
1 cup masoor dal/Red Lentils washed
salt to taste
1/2 tsp red chilli powder (optional)
For seasoning:
1/4 tsp turmaric
1/2 tsp mustard seeds
1/4 tsp cumin
1/2 tsp black gram
1/2 tsp chana dal
2  dry red chillies
dash hing/asafetida
1 tsp oil
2-3 tsp of lemon juice

1. Add 2 cups of water to Pressure Cooker, let it warm for a minute, add lentils, spinach, onion, green chillies, garlic, salt and chilli powder to it.
2. Cook it until 3 whistles of pressure cooker, then turn down the heat.
3. For seasoning: heat the oil, add red chillies, channa dal, black gram, mustard, cumin, turmaric, hing, let it splutter, then add this to cooked dal into th pressure cooker, mix it throughly.
4. Add lemon juice
4. Serve with warm rice and ghee.
5. Taste good with Papad or curd chillies
