Rava Dosa

Rava Dosa (semolina dosa) is very quick version of dosa, very few ingredients go into this make a crispy instant dosa. The word semolina is derived from the Italian word "semola" meaning flour. Semolina is a product of wheat milling that is created when the wheat kernels are processed using corrugated cast-iron rollers. During this phase of wheat milling, the bran, germ and endosperm are separated and the endosperm breaks into coarse grains. These coarse grains are called semolina and can be further processed to produce wheat flour .

Ingredients:
1 cups semolina/rava
1/4 cup rice flour
1/4 cup milled oats flour
1/2 tsp cumin seeds

1/4 cup coconut, grated (optional)
coriander leaves – 2 tbsps (optional)
curry leaves – few (optional)
finely chopped green chillies – 1 or 2
salt to taste
water – 21/2 cups (approx)

butter milk - 1/2 cup
oil as required



1. Mix all the ingredients together in a bowl. Add the butter milk and water slowly to the dry mix without forming any lumps. Keep the mixture for 15 minutes.
2. Heat the tawa and then pour the batter into a circle from the edges of tawa.
3. Keep till its done and then turn it over and add a tspn of oil. Cook till the other side is also done and serve it with coconut or tomato chutney.
