Poha Cutlet

Poha aka Rice flakes(flatened rice) or Atukulu in Telugu easily digestable form of raw rice, very popular across sub-continent. The creation of rice flakes begins with paraboiles rice. Flattened rice can be eaten raw by immersing it in plain water or milk, with salt and sugar to taste, or lightly fried in oil with nuts, raisins, cardamoms, and other spices.

Ingredients:
2 cups brown rice flakes
1 cup thick buttermilk
3 green chillies
cilantro chopped
curry leaves chopped
1 tsp ginger chopped
1 large carrot grated
4 tsp grated coconut
2-3 tsp rice flour
1 onion chopped
3-4 tsp oil

1. Soak rice flakes in buttermilk for 20-30 min add little water if necessary.
2. Gring rice flakes with buttermilk to make a smooth dough.
3. Add chillies, cilantro, curry leaves, carrot, coconut, ginger, onion, salt to it.
4. Then add rice flour, make a good consistancy to blend it into oval shape.
5. Heat the pan, drizzle oil and place cutlets to fry for 5 min.
6. Turn over, drizzle oil again and fry them for another 2-3min.
7. let them turn into golden brown colour.
8. Dishout and enjoy with green chutney.
