Ingredients:
1 pound or bunch of asparagus, 1/2 inch cubes
1 onion chopped
2 tomatoes chopped
1 tsp red chilli powder
1/2 tsp garam masala
6-8 curry leaves
1-2 tsp oil
salt to taste
For Seasoning:
1/4 tsp turmaric
1/4 tsp cumin
1/4 fennel seeds
1 tsp ginger grated
1 tsp garlic thinly chopped
1. Heat oil, add cumin, fennel, ginger, garlic, turmaric, saute for a min, then add onion let the colour turns to golden brown.
2. Add tomatoes and cook for 2 minutes.
3. Then add asparagus to it cook with out lid for 8-10 min.
4. Add salt, chilli powder and cook for a minute.
5. Before dishingout add garam masala(optional).
6. Serve hot with warm rice.
Note: select firm,dry asparagus, discard the bottom most part i.e., Hold it and snap it from the end.
