Vegetable Biryani

Biryani is a Persian(Farsi) word, means 'fried before cooking', usually meat and rice are clustered during cooking. Over 30 different types of Biryanis are developed with time, most popular are Hyderabadi, Lucknow and Tahiri Biryani. Needless to say it was a food for Nawabs or Nizams. The Vegetarian Hindus leading to the development of Tahiri Biryani, which is a Biryani with Vegetables.

Ingredients:
2 cups Basmati rice
31/2 cups water
1 tsp ginger-garlic paste
1 tsp veg biryani masala
2 bay leaves
2-3 cloves
1 inch Cinnamon stick
1/4 tsp nutmeg powder
2 blades mace
2 star anise
potato diced
carrot chopped
beans diced
1 large onion chopped
2-3 green chillies chopped
salt to taste
5-6 tsp cilantro chopped
3-4 tsp mint chopped
3-4 tsp oil


1. Soak rice in water for 15 min, wash it and keep it aside
2. Heat oil in a skillet, add whole masala(clove, Cinnamon, bay leaves, mace, anise) and fry for 3 min.
3. Add onions, green chillies, saute for 4-5 min until turns transparent
4. Add ginger-garlic paste to it, then add vegetables of your choice
5. fry them for at least 7-9 min.
6. Add cilantro, mint to it, fry them for couple of minutes.
7. Lastly add garam masala to it, turn off the heat.
8. Add warm water to a cooker, add rice to it, then add fried vegetables and salt to it.
9. Serve warm with Raitha or any gravy curry.
