Methi Carrot Kichidi


A glass of fresh fenugreek leaves (methi) could be the perfect drink to control the insulin level in the blood. This is often used to treat problems related to digestive system like constipation and gastritis.

Carrots are being good for the eyes and is rich in beta-carotene and helps slows down the ageing of cells.

Ingredients

1/2 cup - methi leaves
1 onion - big chopped
2 -3 green chillies - chopped
1 cup carrots - grated
1/2 inch - ginger finely chopped
1 tsp - garlic, chopped
1 tsp - jeera
1 cup - rice
1 cup - moong dal
2 tsp - butter
1/8 tsp - turmeric
1/2 tsp - pepper seeds
1 tsp - curry leaves chopped
2 tsp - lemon juice
2 tsp oil
salt to taste


Method

1.  Mix rice and moong dal, wash it thoroughly and add 4 cups of water and cook(like how you cook rice).
2. Heat the pan add butter and oil, add jeera  and pepper seeds to it let it fry for a minute.
3. Now add onion, green chilly, curry leaves, turmeric,ginger, garlic and fry them for 3-4 min.
4. Then add methi leaves fry for 3-4 min, add carrot and fry for 5 min.
5. Now add cooked rice and moong dal to it add salt and lemon juice to taste mix well.
6. Tastes good with coconut chutney or sambar.
