Uggani


Uggani is authentic and very healthy dish of Karnataka. Uggani is a snack or breakfast item in Karnatka and in the Rayalassema area of Andhra Pradesh. Uggani is best served with mirchi bujji.

Ingredients

Puffed Rice -  4 cups
Onion - 1 big one finely chopped
Green chillies - 1-2 slitted
Turmeric - 1/2 tea spoon
Roasted Chickpeas - 5 to 6 table spoons spoons
Dessicated coconut - 4 to 5 table spoons
Peanuts - 3 to 4 table spoons roasted and peeled
Red chillies - 2to 3
Lemon juice - 2 tsp
Cilantro - 4 to 5 tsp chopped
Salt to taste

For Tempering
oil - 2 to 3 tsp
mustard seeds - 1 tsp
jeera - 1/2 tsp
curry leaves - 1 spring


Preparation Method

1. Add puffed rice to the water in a bowl and allow to soak for 3-4 min. Wash ans squeeze out water from the puffed rice and place it in a plate.

2. Grind roasted chick peas, coconut, few pea nuts and red chillies to fine powder and keep it aside.

3. Heat oil in a skillet, add mustard seeds, jeera, curry leaves and chopped onions one after other and let it fry. add turmeric to it.

4. Now add puffed rice to it and turn off the flame. Add salt and lemon juice to it and mix well.

5. Garnish with cilantro and rest of peanuts.

6. Enjoy with Mirchi Bujji
