Vegetarian Haleem

Haleem is a stew found in bazaars during Ramadan (Ramzan). It is very popular in subcontinent, middle east and south Asia. This is originally a Arab dish, brought to Hyderabad during the Mogul period by the immigrants of Yemen Arabs and Iranians. Usually haleem is made of mutton or chicken. Today let us try vegetarian haleem here.

Ingredients for powder(course)

1/4 tsp - kebab cheeni
1/4 tsp - shahi jeera
1/4 tsp - green cardamom
1/4 tsp - peppercorns
1/4 tsp - cloves
1//4 tsp - jeera
1 inch - Cinnamon stick
1 tsp - sesame seeds
1tsp - moong dal
1 tsp - toor dal
1 tsp - chana dal
1 tsp urid dal
5-6 - almonds
5-6 tsp - oats
3/4 cup - Dalia/couscous/broken wheat(wheat rava)

Ingredients

2-3 tsp - ghee/butter
2 tsp - chopped cashew nuts
2 tsp - chopped pistachios
2 tsp - chopped almonds
2-3 tsp - green chilly paste or finely chopped green chilly
1-2 tsp - ginger garlic paste
3 tsp - brown onion
1 cup - soy flakes (soaked in boiled water and squeezed )
1/2 cup - milk
1/2 cup - curd/yogurt
1 tsp - rode petals
3 tsp - chopped coriander
3 tsp - chopped mint/pudina
1/4 cup - carrots cubed
1/4 cup - green peas
salt to taste

Method

1. Add all ingredients of first list to a mixer jar and make a course powder of it.
2. Heat ghee/butter in a heavy bottom pan or pressure cooker, add cashew, pistachio, almonds, let them fry for a minute.
3. Now add brown onions, green chili to fry for a minute or 2.
4. Then add ginger garlic paste, after a minute add milk and then curd to it. 
5. Now add coriander, mint to it and let it fry about  couple of minutes.
6. Then add squeezed soy flakes, carrots, green peas, mix and fry it for a minute.
7, Now add 2 - 2 1/2 cups of water to the above course powder mix well, it should not have any lumps in it.
8. Add this powder liquid to the pan ans mix thoroughly with the fried ingredients in the pan, let it cook for couple of minutes, it start becoming thick consistency in a while.
9. Then keep the lid on and put the flame in simmer for 15 min, keeping the weight on the pressure cooker.
10. Remove the lid after 15 min, transfer it to the serving bowl.
11. Garnish with coriander, mint leaves and lemon piece.
12. Enjoy  vegetarian Haleem.
