Methi Coconut Fry

Methi aka fenugreek is a very good source of Iron and is considered for curing anaemia. Patients with low haemoglobin count are usually put on diet of fenugreek, spinach and lettuce. 

Eating coconuts is excellent of immunity, development of strong healthy bones and teeth. Its anti-oxident properties slow down the ageing process.

Ingredients

Methi leaves - 1/2cup washed
Onion - 1 finely chopped
Tomatoes - 2 chopped
coconut - 1 cup grated
Peanuts - 1/4 cup roasted and powdered coarsely
sesame seeds - 1 tsp
Salt to taste
Green chilly - 2 finely chopped
Red chili powder - 1tsp
Coriander - 3 tsp chopped

For Tempering

2-3 tsp - Oil
1/4 tsp - Turmeric
1/8 tsp - Asafetida
1 stem - curry leaves
1/4 tap - fennel seeds
1/4 tsp - mustard seeds
1 tap - Tour Dal

Method

1. Heat oil in a pan and add toor dal, mustard seeds, jeera one after the other, then add turmeric, asafetida and curry leaves.
2. Now add onions and green chillies to it and let it fry for 5 - 7 min.
3. Then add tomatoes to it and keep the lid on for 5 min.
4. Now add Methi leaves to it , let it cook for 5 min keeping the lid on.
5. Add coconut, salt and red chilly powder to it, fry it for 5 min.
6. Now add Peanut powder, sesame seeds keep the lid on for 2 min.
7. Enjoy it with rice or roti.
