Plain Masala Dosa

Dosa, a south Indian delicacy available in different flavours. It is a fermented pancake make from rice and black gram dal. Dosa is a common breakfast item or street food in the southern India which is gluten-free and contains proteins.










Preparation Time: 20-30 min
Fermentation: 7-8 hrs or overnight
cook Time: 2-3 min/dosa

Ingredients:
For dosa dough
1 cup black gram dal/urid dal
3 cups rice
1 tsp fenugreek seeds
1/4 cup rice flakes
For Masala
3-4 dried red chillies
1 inch ginger root
1 garlic clove
2 tsp lemon juice
1/2 cup roasted chana dal
salt to taste


1. Soak rice, black-gram dal, fenugreek, rice flakes for 5-6 hrs.
2. Then grind wet ingredients to make a smooth paste, add salt to taste and keep it for fermentation for 7-8 hrs or overnight.
3. Add all the ingredients of masala to a mixer-jar and make a smooth paste, keep it aside.
4. Heat the dosa pan, pour ladle full of dough on the pan, rotating it circularly using the same ladle makes a round dosa(pan cake).
5. Add oil circularly on the edges of dosa, let it cook for 2 min.
6. Now spread masala paste over the dosa(do not turn the dosa)
7. Fold the dosa to half, tastes good with pickle or coconut chutney or sambar.
