Snakegourd chutney

The Snake Gourd is a tropical vegetable of Indian origin and is known as  potlakaaya in Telugu, Pudalankaai in Tamil, paduvalakaayi in Kannada and padavalanga in Malayalam. It’s a highly nutritious vegetable and is widely used in South Indian cuisine. Snake gourd has anti-inflamatery properties, natural antibiotic, remove pus, expel toxic matter from the body and also relieves constipation.




Snake gourd Recipe

Prep & Cooking: 20-25 mts
Serves 3-4 persons


Ingredients:
1 medium size snake gourd
1/8 tsp turmeric/haldi/pasupu
5-8 fresh curry leaves
salt to taste
3-4 tsp yogurt
1 tsp lemon juice
1 tbsp urad dal/whole black gram
1/2 tsp teaspoon mustard seeds
1/2 tsp cumin seeds
1/4 tsp hing/asafoetida/inguva
2 tbsps oil
1. Cut the snakegourd into small pieces and allow them to cook in a bowl and add little salt to it, while cooking u can see the water coming out of the pieces and let it evoporate.
2. After they are cooked allow them to cool n keep it aside.
3. make a paste of green chilles, garlic clove, cumin and cooked snake gourd.
4. Take the paste into the bowl add yogurt mix it well.
For tempering
Heat the oil in a pan, add urad dal, mustard seeds,turmeric, hing and curry leaves, let it fry until the urad dal chanes to brown colour, then mix this to the paste.
Finally add lemon juice and salt. It tastes good with plain rice.
